These hot and sunny days remember me of my childhood vacations, when my family and I used to spend the summer at Nayarit, Mexico. We would always eat seafood in many ways, but the best was always the ceviche! It’s a no fuss, no cook meal which is perfect for hot days.

Last time my sister came to visit, she brought a special and beloved present with her: my grandma’s molcajete, made of very black stone and decorated with a cute pigglet´s head and its own tejolote (that’s the way we called the pestle).

Esquites

Esquites is a fast snack and staple on the streets of Mexico. It’s sold at food carts, served in cups usually, and it’s a great way to serve up this season’s corn. This is a spicy recipe so if you prefer less heat, omit the piquin pepper and remove the seeds and vein from the serrano pepper.
